Meringue Ghosts

Serves 8

Preheat oven 300o

Prep Time: 10 minutes

Cook Time: 35 minutes plus 1 hour with oven off

Meringue Ghosts

Ingredients:

3 egg whites at room temperature

1 teaspoon vanilla

¼ teaspoon cream of tarter

Dash of salt

1 cup sugar

15 – 20 mini chocolate chips

Directions:

  1. Place a sheet of parchment paper over a baking pan and set aside
  2. In a mixing bowl, combine egg whites, vanilla cream of tarter and salt.  Beat with an electric mixer on medium speed until soft peaks form (the tips will curl when lifting  the beater).
  3. Add sugar, one tablespoon at a time, white beating on high speed until very stiff peaks form (the tips stand straight up when beater is lifted) and sugar is dissolved.
  4. Spoon meringue into a pastry bag or plastic bag and cut the tip.
  5. Pipe meringue onto the baking pan into the shape of a ghostly figure.  Add mini chocolate chips for eyes.
  6. Bake 35 minutes then turn off oven but keep meringues in the oven for an additional hour to harden.
  7. Remove from oven and cool to room temperature.

Pumpkin Spiderweb Cookies


I am more of a cook then a baker but when I saw these, I had to try them.  I found out that I actually ran the knife the wrong way.  When you decorate the cookies, run the knife from the center out and they will get spiderweb effect.

These are delicious and are worth trying.

Pumpkin Spiderweb Cookies

Serves 16

Preheat oven 350o

Prep Time: 10 minutes

Cook Time: 13 minutes

Decorating Time: 30 minutes

Pumpkin Spiderweb Cookies

Cookie Ingredients:

2 2/3 cups flour

1 teaspoon baking soda

¾ teaspoon salt

½ teaspoon ground all-spice

½ teaspoon cinnamon

¾ cup canned pumpkin

¼ cup skim milk

¼ cup low calorie butter spread

1 egg

¼ cup egg substitute

Cookie Directions:

  1. Coat baking sheets with cooking spray.
  2. In a bowl, combine flour, baking soda, salt, all spice and cinnamon and set aside.
  3. In a small bowl, whisk together pumpkin and milk and set aside.
  4. In a mixing bowl, beat sugar and butter spread on high speed until well blended.  Beat in eggs.
  5. On low speed, alternate adding a little flour mixture and pumpkin mixture, beginning and ending with flour mixture.
  6. Drop ¼ cup spoonfuls of batter on cooking sheets.  Bake for 13 minutes.
  7. Remove from baking pan and cool on racks.

Icing Ingredients:

3 cups confectioner’s sugar

3 tablespoons light corn syrup

½ teaspoon vanilla extract

3 tablespoons skim milk plus 4 teaspoons

2 tablespoons cocoa powder

Icing and Decorating Directions:

  1. Once cookies are cooled, make icing.
  2. Blend confectioner’s sugar, corn syrup, vanilla and 3 tablespoons of milk until smooth.
  3. Remove 1/3 of icing and mix in cocoa and 2 teaspoons of milk.  Transfer to a plastic bag and cut a little off the corner.
  4. Spread white icing over each cookie.  To create spiderweb, pipe chocolate icing in a spiral into each cookie then drag a knife through the spiral.
  5. Let stand until set.

Honey-Mustard Ham Steaks and Apples

Honey-Mustard Ham Steaks and Apples

Ingredients:

4 5-ounce ham steaks

1 large onion – cut into large pieces

2 large cooking apples – cut into large pieces

½ cup apple cider

1 tablespoon brown mustard

2 tablespoons honey

1 cup chicken broth

1 ½ tablespoons flour

Directions:

  1. Heat a large skillet on medium high heat and spray with cooking spray.  Add ham steaks and cook for about 5 minutes on each side until browned.  Remove ham steaks, cover and set aside.
  2. Reduce heat to medium and add onions and apples to skillet.  Cook 5 – 10 minutes until soft and browned.  Increase heat to medium high and add apple cider.  Cook until cider is completely absorbed (about 5 minutes).   Remove from skillet and add to ham steaks.
  3. In a small bowl, whisk together mustard, honey, chicken broth and flour.  Add to skillet and, stirring constantly, cook until bubbly and thick.  Add back ham steaks and apples and onions, lower heat and simmer for 15 minutes.
  4. Spoon onto serving platter.

Cook Time 45 – 50 minutes

Cranberry Apple Pork Loin

Ingredients:

Cooking spray

1 pound (16 ounces) boneless pork loin

½ teaspoon ground nutmeg

1 tablespoon fresh thyme (or 1 teaspoon dried) – finely chopped

Salt and pepper

2 cloves garlic, minced

2 apples – cored, peeled and chopped coarsely

2 tablespoons brown sugar

1 can (16 ounces) whole cranberry sauce

½ cup fat free chicken broth

Directions:

  1. Combine nutmeg, thyme, salt and pepper and rub on pork roast.
  2. Heat skillet on high heat and spray with cooking spray.  Add pork to skillet and brown for about 5 minutes on each side.  Remove pork, cover and set aside.
  3. Reduce heat to medium and add apples and sauté for about 2 minutes.  Add garlic and sauté for 1 minute.
  4. Add brown sugar, cranberry sauce and chicken broth and cook, scraping any pieces from the bottom of the pan.  Increase heat and bring mixture to a boil
  5. Add pork, reduce heat and simmer for 30 – 40 minutes.  Pork should reach 160o when cooked.  Remove pork, cut into 8 slices and place on serving platter with sauce.

Roast Turkey Breast with Apples and Sweet Potatoes

Serves 6

Preheat oven 425o

Ingredients:

2 large sweet potatoes – cut into large pieces

4 apples – skinned and cut into large pieces

2 pounds boneless/skinless  turkey breast or 2 ½ pounds with bone

1 teaspoon thyme

½ teaspoon salt

½ teaspoon marjoram

½ teaspoon chervil

Directions:

  1. Place potatoes and apples in a large roasting pan in one layer.
  2. Season turkey breast with thyme, salt, marjoram and chervil.
  3. Place turkey breast on top of apples and potatoes.
  4. Roast 45 – 50 minutes in the oven until internal temperature reaches 170o.
  5. Remove turkey breast from pan and cover for 10 minutes before carving.
  6. Place apples and potatoes on a serving platter with carves turkey meat on top and serve.

Baked Ham and Broccoli

Serves 6

Preheat oven 375o

Prep Time: 10 minutes

Cook Time: 45 minutes

Ingredients:

1 onion – chopped

1 pound ham steak – diced

1 pound broccoli florets – cut into small pieces

6 cups cubed Italian bread

1 ½ cups skim milk

1 ½ cups egg substitute

1 tablespoon Dijon mustard

½ teaspoon chervil

1 cup shredded low fat cheddar cheese

Directions:

  1. Spray a 9 X 13 inch baking dish with cooking spray.
  2. Heat a non-stick skillet on medium high and spray with cooking spray.  Add chopped onion and sauté for about 5 minutes until softened.  Then add ham and brown.
  3. Spoon onions and ham into a large bowl and then add broccoli and Italian bread, cheese and toss.
  4. In a medium bowl, whisk together milk, egg substitute, mustard and pepper.
  5. Pour egg mixture over bread mixture and stir.
  6. Pour into baking dish.
  7. Bake in the oven for 40 to 45 minutes.

Slow Cooker or Crock Pot

Prep Time: 10 minutes

Cook Time: 5 ½ hours

Ingredients:

1 pound London broil – cut into 1 inch pieces

3 tablespoons flour

½ teaspoon salt

¼ teaspoon pepper

1 tablespoon fresh thyme (or 1 teaspoon dried)

1 package (8 ounces) baby bella mushrooms – sliced

8 ounces baby cut carrots

2 cloves garlic – minced

1 package (9 ounces) frozen pearl onions in cream sauce

1 ½ cups beef broth

¾ cup red wine

1 package (16 ounces) frozen gnocchi

Directions:

  1. Toss together steak, flour, salt, pepper and thyme in the slow cooker.  Add mushrooms, carrots, garlic, onions, broth and wine.  Set slow cooker on high and cook for 5 hours.
  2. Remove lid after 5 hours, stir stew and add gnocchi.  Cover and cook on high for 30 minutes.

Creamy Roast Chicken in Mushroom Sauce


My family was delighted at how delicious this was.  If you like creamy sauces and mushrooms, this is a must try.

My son hates mushrooms and even enjoyed it.  My husband dislikes cream sauces and enjoyed it too.  So it might be worth a try even if you don’t like creamy with mushrooms:)

Creamy Roast Chicken in Mushroom Sauce

Serves 4

Creamy Roast Chicken in Mushroom Sauce

Preheat oven 425o

Prep Time: 15 minutes

Cook Time: 1hour and 15 minutes

Ingredients:

1 ½ pounds chicken breast on the bone – skinned

1 large onion – chopped

½ cup celery – chopped

2 cloves garlic – minced

4 ounces shitake mushrooms – diced

½ cup white wine

½ cup cream sherry

2 cups chicken broth

2 bay leaves

2/3 cup fat free sour cream

Directions:

  1. Arrange chicken pieces on a roasting pan and season with salt and pepper.  Roast chicken for 45 minutes, cover, and set aside.
  2. Heat  a large deep on medium heat and spray with cooking spray.  Add onion and sauté for 5 minutes until browned.  Add mushrooms, raise the heat and cook for 3 minutes until lightly browned.  Add celery and cook another 3 minutes then add garlic and cook for about 1 minute.
  3. Add wine and sherry and reduce until liquid is almost completely absorbed, scraping any pieces from the bottom of the skillet.
  4. Add chicken broth and bay leaves and simmer for 15 minutes.  Add chicken to heat for about 5 minutes.
  5. Remove chicken and place onto a serving platter.  Remove skillet form heat, add sour cream and stir until combined.  Heat for 2 minutes then pour sauce over chicken and serve.

Ingredients:

1 pound boneless pork loin

1 teaspoon paprika

1 tablespoon + 1 teaspoon chili powder

½ teaspoon black pepper

½ teaspoon salt

1 teaspoon thyme

1 onion– chopped

1 jalapeno pepper – minced

2 cloves garlic – minced

½ cup whiskey

2 (12 ounce) jars chili sauce

1 ½ cups water

1 cup chicken broth

1 teaspoon chipotle seasoning

4 small or 2 large potatoes – peeled and diced

1 (15.5 ounces) can of red kidney beans

Directions:

  1. Combine paprika, 1 teaspoon chili powder, pepper, salt and thyme and rub on to pork loin.
  2. Set pork in a roasting pan, cover with foil and slow cook for 3 hours.  Remove from heat and cool.  Shred pork with a fork and set aside.
  3. Heat a large pot on medium heat, spray with cooking spray and add onion.  Sauté for 5 minutes until soft and browned.
  4. Add jalapeno pepper and sauté for 3 minutes, add garlic and sauté for 1 minute.  Add whiskey, scraping any pieces from the bottom of the pot and cook until reduced by half.
  5. Add chili sauce, water, chicken broth, 1 tablespoon of chili seasoning, chipotle seasoning, shredded pork and potatoes to the pot.  Simmer on low for about 30 minutes or until potatoes are soft.
  6. Add kidney beans and simmer for 15 minutes.  Serve hot.

Ingredients:

1 tablespoon fresh thyme + 1 teaspoon (or 1 teaspoon and ½ teaspoon)  – separated

1 teaspoon paprika

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon pepper

1 ½ pounds boneless pork loin

6 small or 3 large potatoes – cut up

1 large onion – cut up

1 tablespoon olive oil

Directions:

  1. Finely chop 1 tablespoon thyme and combine with paprika, onion powder, salt and pepper.  Rub spices on pork and set aside.
  2. Toss together potatoes, onion and remaining 1 teaspoon thyme with 1 tablespoon olive oil.  Spray a large roasting pan with cooking spray and spoon onion and potatoes on the bottom.
  3. Roast potatoes and onions for 25 minutes, stirring after 15 minutes.  Add pork loin on top and roast another 30 – 40 minutes until internal temperature reaches 165o.
  4. Remove from heat, cover pork for 10 minutes then slice and serve with roasted potatoes and onions.
